The Journal publishes original and review articles on most topics in food science and related areas.
Before submitting your manuscript, please read about our publishing policy and ethics, submission requirements, and review procedure.
Authors shall guarantee that the submitted manuscript contains authentic results that have never been published and are not being reviewed by other journals.
Deliberately erroneous or forged data and conclusions are unacceptable.
Authors are free to post the initial draft of their manuscript on such public preprint servers as bioRxiv, arXiv, or in the related repository. In this case they should inform the Journal about it and provide a link to the preprint. However, they cannot post their article on preprint servers if it has already been published by the Journal or improved to meet the requirements of the editorial board or reviewers, as it might be regarded as a duplicate publication. When citing an article published in the Journal, please make sure that the link leads to the official page of the article on the Journal's website.
A manuscript to be submitted to the Journal for publication should meet its profile and formatting standards. Papers that do not meet these standards will be rejected.
Manuscripts submitted to the editorial board are checked for borrowings from open sources (plagiarism). The check is carried out through the Internet resources (www.antiplagiat.ru). Should multiple unauthorized borrowings be detected, the editorial office follows the COPE algorithm. If a manuscript proves to be at least 85% original, it is registered by the editor, who then contacts the author within 10 days.
The editors of the journal do not accept manuscripts that are fully or partially created or supplemented using artificial intelligence.
To be published, a manuscript has to be recommended by two independent reviewers appointed by the editor-in-chief. The double blind peer review can be conducted by the members of the editorial board or by acknowledged academic experts (doctors, professors) in the area of research who have recent publications on the related topic.
The reviewers are aware that the copyright for the manuscripts belongs solely to their authors and that the articles under review cannot be shared or copied.
Reviewing is strictly confidential. A breach of confidentiality is unacceptable unless the reviewer reports unreliability or counterfeiting of the material.
The reviewer defines the type and content of the article; evaluates whether the manuscript is relevant for the scientific community, possesses scientific novelty and practical significance, corresponds to the profile of the Journal; checks the text for consistency and reliability of research results; decides if the title corresponds to the content; and assesses the quality of the abstract, illustrative material, and the list of references.
Based on the results, the reviewer produces a reasoned opinion:
- the manuscript can be recommended for publication;
- the manuscript can be recommended for publication after some improvement; or
- the manuscript cannot be recommended for publication (reasons for rejection).
Reviewer undertakes to conduct peer review of the manuscript objectively. All the conclusions of the reviewer should be strictly provided with links to authoritative sources. Personal criticism of author by the reviewer is unacceptable. In such cases, the Editors follow the COPE protocole.
The original reviews are kept in the editorial office for at least 5 years to be submitted to the Ministry of Science and Higher Education of the Russian Federation upon request.
We will necessarily notify you of acceptance, rejection, or the need for revisions within 3 months of receipt of the manuscript. If the reviewer claims that the article has to undergo a considerable revision, it will be returned to the same reviewer for the second check-up after it has been improved by the author.
Should the author be unable or unwilling to take into account the reviewer's recommendations, the editorial office reserves the right to reject the article.
A manuscript can be rejected after two negative reviews or one negative review of its revised variant. In this case, the author receives a substantiated written refusal and a copy of the reviews. The reviewer's name may be reported to the author only if the reviewer gives consent to it.
After the peer review stage, the manuscript receives a final approval from the editor-in-chief (in his absence – deputy editor-in-chief). In exceptional circumstances, the decision can be made at the meeting of the editorial board.
The editor-in-chief approves the content of the Issue. The manuscript undergoes stylistic and grammatical editing. The layout of the manuscript is e-mailed to the author for approval.
Two manuscripts submitted by the same author cannot be published in one issue or in two consecutive issues.
Authors of articles published in the Journal retain the copyright of their articles and are free to reproduce and disseminate their work. All articles are licensed under a Creative Commons Attribution 4.0 International Public License (CC BY 4.0), which permits their use, sharing, adaptation, distribution and reproduction in any medium or format, as long as you give appropriate credit to the original author(s) and the source.
We follow the open access policy proclaimed by the Budapest Open Access Initiative to encourage knowledge sharing across the globe. For more information please read BOAI statement.
All articles published by the Journal are made freely and permanently accessible online immediately upon publication, without subscription charges or registration barriers.
Article processing charge (APC)
All articles require a publishing charge of 100,000 rubles per article, regardless of volume, language, graphic material, etc. Submission and peer review are free of charge, which means that you pay the article publishing charge only after you have received a positive review and your manuscript have been accepted for publication by the Chief Editor.
The article processing charges cover the costs for editing, post-review technical processing, DOI assignment, online hosting and maintenance, indexing in academic databases, and publishing.
The corresponding author manages the article processing charge payment. Publications can be financed by any stakeholders, e.g., authors, universities, research organizations, grant funds, etc. The manuscript acceptance email contains the payment deadline and documents, i.e., Agreement for Provision of Editorial and Publishing Services, of which you fill in and send us by email. The Agreement form is different for legal entities and individuals. To confirm the payment, you email us a scan of the payment receipt.
Please note that prepayment does not guarantee publication. Should you make an advance publishing charge payment and your article receives a negative review, we will return the money, minus bank commissions. If your manuscript has been accepted for publication, please make sure that you keep the payment deadline because we cannot publish your manuscript until the money has arrived in the account of Kemerovo State University.
We will refund the publication fee if an error on our part violates the open access model and we fail to correct it within 30 business days of posting. If you become aware of an error in the open access or licensing status of your article, please contact us immediately.
However, no article publication charges will be refunded if the retraction occurred as a result of your own error or misconduct.
The publication fee is subject to change and is made at the rate in effect on the date you submitted your manuscript. We inform our authors about publication fee changes on our website 30 days in advance.
Discounts and privileges
We publish your article free of publication charge if:
• one of the authors in your team has a ≥18 H-index in the RSCI core (1 article per year);
• one of the authors in your team is a member of our editorial board (1 article per year).
You get a 50% discount if:
• one of the authors in your team is our reviewer who has submitted ≥4 reviews within the past 12 months;
• your research was not supported by grants or from any other sources.
Please make sure your submission letter mentions that you fall into one of these categories.
The Journal neither pays royalties nor provides free copies to the authors.
We do not retain copies of rejected articles. Nor do we return accepted or rejected manuscripts.
Papers accepted for publication are published in priority sequence, according to the acceptance date. In exceptional circumstances, the editorial office retain the right to change the publication order.
Should the editorial opinion differ from that of the author, the article in question may be published with a corresponding footnote.

This section provides detailed formatting requirements for manuscripts published in the Journal. We publish original, previously unpublished articles that possess scientific novelty in the field of food industry and related areas of science.
We welcome papers based on collaboration between Russian and foreign scientists.
The editors of the journal do not accept manuscripts that are fully or partially created or supplemented using artificial intelligence.
Articles are published in Russian or English; metadata, table headings, and figure captions are provided in two languages.
The minimum volume is 30000–35000 characters, not including the Russian and English abstracts and references. Review articles can exceed the limit of 35000 characters.
A review article has an unlimited wordage.
Format instructions
- Paper size A4 (210 x 297 mm).
- Margins (all) 20 mm.
- Times New Roman, size 10.
- Single line spacing and interval between paragraphs, without automatic hyphenation.
Formulae and figures
Please, avoid overloading your text with unnecessary formulae or duplicating the same data in tables and graphs.
Mathematical equations (font size 10) and chemical formulae (font size 9) should be produced in the Equation (Math Type) formula editor or in MS Word as a whole unit. Each formula and equation should be paragraphed and numbered in brackets at the end of the line. It is necessary to maintain the standard style of symbols and indices: those in Roman type should be italicized, Russian and Greek characters should be in upright lettering, with lower-case and capital letters, upper and lower indices.
Figures and diagrams, preferably colored, should be made in Microsoft Office and Corel Draw. Please make sure the figures can be improved by the editors if necessary.
Figures and tables are to be titled, numbered, and referred to in the text.
If necessary, use bold typeface to highlight important ideas in the tables.
Structure
Each article sent to the Journal should be structured as described below:
- Below indicate the type of your manuscript (scientific article, review, short scientific message, etc.).
- Title (<10 words>) in Russian and English. It should be informative and reflect the main results of the research. Please avoid abbreviations.
- Initials and last names of the authors, separated by commas. In the Russian variant, please stick to the following order: Ivan Ivanovich Ivanov. In the English variant, follow the reverse pattern with abbreviated paternal name: Ivan I. Ivanov. Mind that you have to register in ORCID (https://orcid.org/) because the English spelling of your name should coincide with your ORCID profile. An ORCID ID is obligatory for each author. Please mark the name of the author responsible for correspondence with an asterisk (*).
- Affiliations: formal name of the institution in Russian and English, city, country. The names and locations of institutions or companies should be given for all the authors. Should there be several institutions, use corresponding superscript numbers to indicate with which department and institution each author is affiliated.
- E-mail address of the author responsible for correspondence.
- Abstract (300–400 words). The abstract should be original and completely reflect the main results and novelty of the article.
The abstract should be structured as follows:
а) Introduction: state your research problem, relevancy, and objectives;
b) Study objects and methods: describe the objects and stages of your study;
с) Results and discussion: describe the actual results achieved;
d) Conclusion: state the practical relevance and prospects of your research.
Please avoid meaningless introductory phrases and vague, general statements in the abstract.
The subject, topic and objective may be omitted if they are clearly stated in the title. Methods and approaches are not compulsory unless they are innovative or of particular importance for the research. Concentrate mainly on the findings: mention the main theoretical and experimental results, actual data, interrelations and correlations found in the research. Give preference to new results and relevant data, important practical discoveries, and conclusions that refute existing theories. Your abstract may repeat conclusions, hypotheses and suggestions mentioned in the article. Please avoid historical perspective unless highly necessary. - Keywords: provide 9–11 keywords that identify the subject of the manuscript. Please do not repeat the terms used in the title and in the abstract. The key words should define the field of study and other important notions that will facilitate computer-based search.
- Funding section is given in Russian and English: indicate how the research and the publication of this article were funded. In the case of grant, specify its number, as well as the official abbreviated name of the organization that issued the grant. State the official abbreviated name of your employer if the study was performed as part of your routine work and did not receive additional funding. The funding section is optional: feel free to omit it if your research had no financial support.
- The body of your article should contain the following sections: introduction, study objects and methods, results and discussion, conclusion. Please observe the following volume ratio: Introduction – 1/5 of the total article volume; Study objects and methods – 1/5, Results and discussion + Conclusion – 3/5.
a) Introduction: this part gives a brief review of the publications related to your research and proves its relevance. In-text references should be given in square brackets and numbered [beginning with No. 1] in the order of their appearance in the text. Make sure your introduction reflects the objectives of your research.
b) Study objects and methods:
• Experimental research papers should contain a full description of the study objects, consecutive stages of the experiment, equipment, and reagents, specifying the names of manufactures in brackets. If the method you use is not widely known or has been considerably modified, please provide a brief description;
• Theoretical research papers should specify objectives, approximations and assumptions, equations and conclusions. Please do not overload the section with intermediate data and descriptions of well-known methods unless you have modified them;
• Review studies should include a paragraph that specifies the selection algorithm for sources to be reviewed. The paragraph describes databases (Scopus, Web of Science, Elibrary; bibliographies, conferences, etc.), types of publications (articles, reviews, ports, books, etc.), publication sources (journals, books, conference proceedings, etc.), period when they were published, justification of the search strategy, exclusion criteria, etc. We recommend you to give preference to electronic databases (Scopus, Web of Science, Elibrary) and thematic journals (see Example).
c) Results and discussion: this section should provide a concise description of experimental data. Rather than repeating the data presented in tables and graphs, the text should seek to reveal the principles detected. It is recommended to use the past indefinite verb tense in describing the results. The discussion should not reiterate the results.
d) Conclusion: briefly summarize the main results of your research. Naturally, the conclusion should contain the answer to the question posed by the introduction. - Contribution: please state the actual contribution of each author to the research process.
Food Processing: Techniques and Technology observes the CRediT (Contributor Roles Taxonomy) taxonomy of the authors’ contributions.
The CRediT taxonomy offers authors the opportunity to share accurate and detailed descriptions of their contributions to the published work (see: casrai.org, scieditor.ru).
- Conflict of interest: it should indicate a real or potential conflict of interest. If there is no conflict of interest, you should write «the author declares that there is no conflict of interest».
- Acknowledgements: this section contains an expression of gratitude to those who contributed to the research. The acknowledgement paragraph is not obligatory.
- AI declaration. You are expected to disclose the use of AI tools at all stages of manuscript preparation, including:
• text generation, even in such formal parts as introduction, discussion, conclusions, or annotations;
• data preparation or validation, e.g., statistical analysis, visualization, or data synthesis;
• translation, paraphrasing, or editing;
• searching for relevant publications or compiling references;
• processing/creating figures, graphs, charts, audio/video materials, etc.
AI declaration is made in the Study Objects and Methods (for research articles) or in a separate section entitled Declaration of AI (for other types of articles).
For each AI use, provide:
• name and version;
• company (if applicable);
• purpose and methods;
• prompts (if possible).
E.g., During the preparation of this manuscript, the author(s) used [name of tool/service] for the purpose of [specify purpose]. Or: AI tool X was used for stylistic editing. AI tool Y was used for primary data categorization. ChatGPT4 was used to generate introduction, which was subsequently reviewed and edited by the author(s). The author(s) assume(s) full responsibility for the accuracy and integrity of the published work.

- References: reference lists are to be made according to State Standard R 7.0.5-2008 System of standards on information, librarianship and publishing. Bibliographic reference. General requirements and rules of making. References should be listed and numbered in the order of their appearance in the article. Use a number in square brackets when citing references in the text.
The list of references should include only peer-reviewed publications that you mention in your text.
It is not recommended to use more than 3 references to web resources. Please avoid citing publications that are more than 5 years old.
Please avoid references to publications that are not readily available, e.g. institutional regulations, state standards, technical requirements, social and political newspapers and magazines, extended abstracts of dissertation, and dissertations. Make sure you do not textbooks, study manuals, unpublished works, proceedings of conferences.
Self-citation should be well-justified and cannot exceed 10%. Please make sure that at least 80% of the works you cite are less than 5 years old; 50% of the referenced sources should be published in periodicals registered in Scopus and Web of Science.
Your references should include publications from leading scientific journals (see List of leading food science journals). Poor citation of foreign sources and two or three-year-old papers reduce your chances of for publication. The reference list should reflect the actual contribution of different countries to the study of the problem. - References are given at the end of the manuscript as a separate block. They should coincide with the references to the Russian part, whether the list contains foreign sources or not. The list should follow the Vancouver style.
- Author information: authors are urged to include their full names and academic titles. The names and locations of institutions or companies should be given for all the authors, including the mailing address with a ZIP-code, phone number, and e-mail. Departments, units, or laboratories should also be specified. Include the ORCID ID-number for each author. Mark the author responsible for correspondence with an asterisk (*).

- their manuscript in MSWord (the file's name should contain the last name and initials of the first author, e.g. SmithJ.doc); Example of article formatting
- a PDF version of their manuscript signed by all the authors (the file's name should contain the last name and initials of the first author, e.g. SmithJ.pdf);
- Information about the authors;
- a scanned PDF version of a cover letter to the Editor-in-chief from the responsible organization with the conclusion about the relevance of the research and recommendations for its publishing. The document should contain the date, reference number, and the signature of the head of the organization;
- Publishing License Agreement
- a Copyright Transfer Agreement (e.g. SmithJ_Agreement.pdf)
- a Consent to the Processing of Personal Data (completed separately for each author);

Submission Preparation Checklist
As part of the submission process, authors are required to check off their submission's compliance with all of the following items, and submissions may be returned to authors that do not adhere to these guidelines.
The manuscripts are accepted if has not been published or submitted for publication elsewhere.
The materials should be prepared in a format OpenOffice, Microsoft Word, RTF, or World Perfect.
Internet links are provided as a complete URL.
Text should be typed with an interval of one and a half line spacing, font Times New Roman, 14 pt; to highlight the accents it is recommended to use italics rather than underlining (except Internet links). All images, graphics and tables are placed within the text according to the meaning of the particular part of text (and not at the end of the document).
Text should follow the stylistic and bibliography requirements as stated in Regulations located in the Part "About Us."
Please, remove the authors' names from the title of the article and other parts of the document to ensure the anonymity of reviewing.
